SUMMER CHICKEN PASTA SALAD

During the Spring and Summer months, we love light and refreshing recipes. Not only is this recipe light and refreshing, but it can also be made ahead of time. Meaning you have more time to enjoy the sunshine and can spend less time worrying about preparing dinner for the night.  

We added Crunchies Freeze-Dried Blueberries for an extra fruity flavor and satisfying crunchy texture. If you do prepare this recipe ahead of time, we do suggest adding the freeze-dried blueberries at the time of serving. This way they’ll keep their crunchy texture, and you’ll have the ultimate tasting experience.

TOTAL TIME: 1 Hour

INGREDIENTS

  • 4 Cups of Bow Tie Pasta 
  • 2 Chicken Breast 
  • Italian Seasoning/Salt/Pepper, to taste.  
  • 1 Package of Crunchies Freeze-Dried Blueberries  
  • ½ Cup of Olive Oil 
  • 1 tsp of Lime Zest 
  • ¼ Cup of Lime Juice 
  • 2 tsp of Minced Shallot 
  • 1 tsp of Honey 
  • Pinch of Salt 

DIRECTIONS

  1. Season chicken with Italian seasoning, salt and pepper to taste. Grill or bake until cooked through.  
  2. Add water to a pot and cook on high heat. Add bow tie pasta once water is boiling. Cook until al dente.  
  3. Drain water from cooked pasta and allow to cool.  
  4. Cut chicken into small bite sized pieces.  
  5. In small mixing bowl add olive oil, pinch of salt, lime zest, lime juice, honey and shallots. Whisk until well combined.  
  6. Add chicken and bow tie pasta to a serving bowl.  
  7. Add the honey lime dressing and mix well.  
  8. Refrigerate for 30 minutes. 
  9. Add Crunchies Freeze-Dried Blueberries to the serving bowl and mix well.  
  10. Serve and enjoy!
